It's not quite strawberry season here in Massachusetts. We had a rainy and cold Spring this year. A few more days of sunshine and the farms will open up the strawberry fields for June.
One of the things that I love about oatmeal is that it's easy to tweak... add a little seasonal fruit, some spice and it's completely different than yesterday's oatmeal.
Here's how I made this Strawberry version:
Quick Irish oatmeal in the microwave with water and a pinch of salt. Add less water than recommended so that it's on the dry side when finished in the microwave. Then add Almond milk to make the oatmeal creamy.
Mix in sliced fresh strawberries, and chopped mint. Pour plain Kefir over the top and more strawberries. If you like your oatmeal sweet, drizzle Agave over the top.
