Watermelon & Green apple salad with mint honey lemon glaze
With summer picnics and July 4th just around the corner I've been thinking about summer salads to make for cookouts with friends. This weekend we're headed up to a lake in Maine where friends have a classic summer house complete with a dock for jumping off into the cool water.
Watermelon salad is easy to toss together ahead of time and with the addition of lemon juice the apples will keep their clean bright color until served.
Watermelon & Apple summer salad
- Watermelon- cut into 3 inch long 1/2" sticks
- 1 Green Apple- peal and cut into 1/4" cubes
- juice from 1/2 lemon
- 2 springs fresh mint- chopped
- 2 teaspoons honey (I used Ariel's infused honey)
Mix the lemon juice, chopped mint and honey together to make the glaze. Place watermelon on the serving plate, toss apples over watermelon then drizzle on the honey lemon glaze and add a sprig of fresh mint. Enjoy!
